Simple Mexican Rice
Source: Trial and error
PREPARE SAUCE
Blend salsa until smooth
Heat 4 cups chicken stock
Add spices to chicken stock - chili powder, salt, and pepper, to taste and salsa
PREPARE RUCE
Heat olive oil in a large skillet over medium heat.
Add garlic and onion, stirring frequently, until onions have become translucent, about 2-3 minutes.
Stir in rice until toasted, about 2 minutes.
FINISH
Stir in tomato sauce and vegetable broth,
*Optional, add corn
Stir and cover pan
Simmer stirring occasionally until the liquid is gone
Garnished with cilantro
