Easy Mexican rice with green chiles and green onion
Make rice as directed on Rice a Roni box. While rice is cooking, wash and chop green onions. About 5 minutes before rice is done, stir in the can of green chiles. About 2 minutes before rice is done, stir in the green onions.
I usually triple this recipe. Once it has cooled, I portion out single servings or double servings into snack-size or sandwich-size bags respectively, then put those into a gallon-size bag and freeze it. The rice can be defrosted in the microwave in a few minutes when you need a side dish but don't have time to prepare one from scratch.
