This is a combination of three different recipes I put together to make this one delicious lamb chop recipe. The marinade really cuts the rich (my hubby says harsh) flavors of the lamb to make it more appealing to the non-lamb lovers in the house. Note: I don't consider 1 lamb chop a serving. If you do, this will serve 8 instead of 4.
Let lamb rest to room temperature. Mix last 12 dry ingredients (everything below the thyme) together in a small bowl. Set aside 3 TBS of the mixture (save the rest in an air-tight container to use on any pork, lamb or steak as a rub). Add the remaining ingredients, along w/ the 3 TBS of reserved rub, to a small bowl and mix. Add the marinade to a gallon Ziploc bag. Add the lamb chops in a single layer and make sure the marinade coats the chops. Seal and let rest on the counter for 30 minutes flipping over every 10 min or so. Grill on a high heat for 3-4 min per side, depending on size of chops, for medium rare.
