Mom's recipe is always the best recipe!
(To make 1 gallon, slice cucumbers & place in a gallon jar. You may also use a quart jar (4 quarts = 1 gallon).
Soak cucumbers & onions in 1/2 cup salt & crushed ice. Finish covering with water. Place lid & something heavy on top for 3 hours or more. Add more ice as needed.
Combine remaining ingredients in a large pot. Boil 10 minutes. Drain & add cucumbers & onions and slowly reheat to boiling. Pour into hot jars, leaving 1/2 inch headspace. Seal & process 10 minutes in boiling water canner.
Variation for firmer pickles: Wash cucumbers. Cut 1/16 inch off blossom end & discard. Cut into slices. Mix 1 cup pickling lime and 1/2 cup pickling salt to 1 gallon water in a large container. (Avoid inhaling lime dust while mixing solution!) Soak cucumber slices in lime water for 12-24 hours, stirring occasionally. Remove from lime solution, rinse, and resoak 1 hour in fresh cold water. Repeat the rinsing & soaking steps 2 more times. Handle carefully as slices will be brittle. Drain well. Proceed with remaining steps.
You might try the similar B & B Pickle recipe here which calls for 6 pound pickling cucumbers if this one is too sweet. You could also decrease sugar to 4 1/2 cups & vinegar to 4 cups as it left a lot of liquid after pouring into jars. The turmeric made the pickles very yellow so consider leaving out or decreasing?
