This dish has a lovely flavour, spicy but not too hot.
In a large saucepan, heat the olive oil and fry the aubergine in batches for about 5 minutes, until lightly browned, adding more oil as necessary. Set aside.
In a mortar and pestle, crush the coriander seeds, chilli flakes and cumin seeds with a teaspoon of salt.
Bone the chick (or buy ready boned) andchop into 2cm dice, put into a bowl with the crushed spices and coat thoroughly.
Heat the pan again, add some olive oil, brown off the chicken in batches and set aside.
In a large stockpot, over a low/medium heat, put 2-3 tablespoons of olive oil and fry the ginger for 3 minutes, then add the garlic and continue to fry for another 2 minutes.
Add the chicken, aubergine, tomatoes, apricots and dates, bring to the boil, lower the heat, cover and simmer for an hour.
Taste to check the spiciness, and add more chilly flakes at this stage if you like. Add the chickpeas and continue cooking for another 20 minutes.
In a dry frying pan, toast the pine nuts until browned all over (watch carefully and keep them moving, they burn very easily).
Put the couscous in a large bowl and cover with boiling stock up to about 1cm above and quickly cover the bowl with cling film and leave for 3 or 4 minutes.
Remove the cling film and fork through the couscous to separate the grains, then add 2 tablespoons of the fresh coriander and parsley, the chopped mint, pine nuts, lemon juice, and 2 tablespoons of extra virgin olive oil.
Mix thoroughly and season to taste.
Finally, taste and adjust the seasoning of the tagine, add 2 tablespoons each of the fresh coriander and parsley, and serve with the couscous.
This is not difficult to make, and it's delicious. If you can't get fresh herbs, frozen are good.
