Candy the walnuts by heating 1/2 tablespoon of coconut oil in a small skillet in medium-high heat. Add walnuts and brown sugar. Toss on about 3 minutes or until walnuts are toasted. Set aside.
Heat 1 tablespoon of coconut oil in a medium skillet on medium-high heat. Add in rhubarb and toss of 1-2 minutes. Add apple slices and a teaspoon of sesame oil. Toss all together for another minute or two and set aside.
In same skillet, add remaining coconut oil and sauté kale. Add water and salt and toss until kale is dark green and soft (approximately 4 minutes).
In a medium salad bowl, toss in kale, rhubarb and apple mixture, strawberries, and candied walnuts.
refrigerate for an hour before serving
