Suggest a better description1. Preheat oven 325°F
2. Spray baking spray on inside & edges of baking pan. Then lightly flour on inside & edges, using oat-flour. Set aside
3. Sift and Mix dry ingredients (oat flour, baking powder, baking soda, cinnamon, nutmeg, salt, cardamom)
4. Wet ingredients:
Mash bananas then hand blend with greek yogurt (or evaporated milk).
Blend in eggs, one at a time.
Blend in all other wet ingredients (vanilla essence, orange juice & rind).
5. Add dry ingredients to wet ingredients in three batches, mixing after each batch is added.
Add almond milk/skim milk too loosen batter if needed. (Take note and document to notes if was needed and the amount and what was the outcome. Also document if greek yogurt or evaporated milk was used.)
6. Reserve some mix-ins for decorating. Gently fold the rest of mix-ins into homogeneous mixture.
7. Pour mixture into greased baking tin. Lightly tap on counter.
8. Decorate top with blueberries/mix-ins. Lightly press them in to avoid falling out.
9. Bake for 45-50 minutes.
10. Test with wooden toothpick. (Document how long it took in notes section)
11. Cool for 15 mins
12. Cut & Serve
