OKRA PREP: (If Frozen Skip)
- Trim the ends of the pods, then dice them about 3/4" in length or cut in 1/2
- Rinse with water a colander & Microwave the Okra for 5 minutes, remove
- Sauté in a wide skillet add some Olive Oil on Med-High heat
- Add some Lemon juice to remove the mucusy film
- Cook till the pods have softened, set aside (remove from skillet)
MEAT SAUTÉ:
- Using the same skillet, add some oil, heat on Med
- Add the diced meat, sprinkle some of the Spice Mix
- Keep tossing the meat till it is light brown, do not overcook
- Set aside on top of the Okra
VEGGIE SAUTÉ:
- On medium heat, in the same skillet add the Onions
- Add the Garlic after the glaze and let it cook
- Add to the pre-cooked Okra, set aside
SAUCE:
- in a large pot, add the diced Tomatoes, Tomato Sauce and water and stir
- Add the other half of the spices. Salt, Black Pepper, Cumin, Coriander & Broth powder and mix
- Bring to a boil for few minutes, let it rest
- Add the Veggie Mix along with the Okra, and turn over
- Simmer for 20 minutes
- Add the chopped Cilantro and stir
- Let it rest for 10 minutes
