Refreshing fresh fruit treat - wonderful in the summer
Preheat oven to 350
For the crust:
Cut into the butter, flour, and sugar until dough forms. Press into a standard cookie sheet or pizza pan, so crust is somewhat uniform throughout. Bake for 12 minutes and cool crust completely.
For the First Layer:
Cream together the cream cheese and powdered sugar. Spread evenly onto the cooled crust.
For the Second Layer:
Separate the peaches from the juice, RESERVING the LIQUID. Arrange peaches on the crust, along with any other fruit desired (grapes, mandarin oranges, blueberries, strawberries, raspberries, kiwi, pineapple, etc). Arrange in a pattern, or dice and mix together on the first layer.
For the Glaze:
Measure the peach liquid, if less than 1 cup then add enough water to equal 1 cup liquid. Combine peach liquid, cornstarch, sugar, and lemon juice in a small saucepan. Stir over medium heat until sauce thickens and becomes shiny and glossy. Cool completely and then spoon over the top of the fruit.
Serve immediately. Refrigerate any leftovers.
