My own take on a tuna melt.
A toaster oven is great, otherwise pre-heat oven to 400.
Place tuna in a medium bowl and flake with a fork. Add the remaining ingredients except the cheese and toss until well mixed.
Arrange bread on rack in toaster oven and toast until lightly toasted. Top each slice of bread with some of the tuna mixture and then cheese and place on a cookie sheet. Bake at 400 until cheese is melted and beginning to brown. You could broil instead of bake but the tuna will not be as warm.
I don't always put in the arugula. So if you don't have any on hand it's no biggie!
You can also substitute the bruschetta for a 15 oz. can Artichoke hearts chopped, several olives chopped (a mix is fine or whatever you have), and a tablespoon or so of capers.
