Sweet quick bread for Rosh Hashanah
Preheat oven to 325 degrees.
Mix eggs, sugar, honey and vegetable oil with an electric mixer until blended. Mix coffee and orange juice into batter. Mix in flour, baking powder, baking soda, cinnamon, allspice and salt. Mix for one minute or until smooth. Mix in chopped almonds.
Pour into greased (or spray with Pam) 9x5x3 inch loaf pan.
Bake for 65 minutes or until a toothpick inserted in center comes out clean.
Remove from oven to rack; cool for 15 minutes. Invert and cool completely.
Slice and serve.
Freezes well.
Note: I often double the recipe to make 2 loaves.
