Throw this together before you go to bed and pop it in the oven when you wake up!
Slice the baguette into 1" rounds and place on the bottom of a 9x13 baking pan. Beat together the eggs, milk, sugar and vanilla and pour over the baguette pieces. Place the peaches in rows on top of the baguette. Sprinkle the brown sugar and cinnamon on top of the peaches. Wrap the baking pan in plastic wrap and refrigerate for 8 hours (overnight).
Preheat oven to 350°F. Remove the plastic wrap from the pan and let sit at room temperature for 30 minutes. Boil the cream in a small saucepan for 10 minutes to reduce the liquid by half and drizzle over the peaches. Bake uncovered for 1 hour, or until the bottom of the pan is browned. Check the bottom of the pan after 50 minutes to ensure it's not burning. Let sit 10 minutes. Serve.
