7am - Light cook top (check visually to make sure both sides are working)
The left hand side knob should have a 'Pilot' indicator mark on it
The knobs need to be held in for at least 30 seconds after pilot is lit
Right hand side seems to get hotter than the left side
Prepare batter as soon as cook top is lit
3kg will easily fit in the metal muffin bowl. For groups over 80 you may need to use one of the BIG plastic bowls
Use muffin mixer for batter. 1 minute on low and another on high (If you use the muffin mixer you will have to do 2 batches)
If you use the muffin mixer you will need to note the following:
- The mixer bowl needs to have cling wrap around the top sides to prevent spatter
- 3 Pieces placed so there is a hole in the middle for the paddle to work
- Start on speed 1. DONT USE speed 3
- Use the paddle NOT the whisk
Use plastic jug for pouring batter (if you hold a bowl under it when pouring there is less mess)
Scrape cooktop and spray with cooking spray between each batch of 9
For speed of cooking fit 9 pancakes on cooktop at a time
Don't stack pancakes straight off hotplates as they stick. spread them around 2 trays
Spread next batch on top of them and repeat
If there are 80 people you will need to start cooking ASAP. (No time to let batter 'stand for 15-20 min)
When finished turn off cook top and tip water over it CAREFULLY TO AVOID STEAM BURNS to help clean top.
Remove tray from under cook top and empty when finished
