A healthy, summery dish. Serve as a light main or with grilled halibut.
1. If using fresh bread, toast cubes on two rimmed baking sheets in a 375 degree oven until dried out, about 10 minutes. Cool. If using stale bread, you can skip this step.
2. In a large bowl, mix the red onion, garlic, cucumber, tomato, vinegar, oil, and salt and pepper to taste. Toss in cooled bread cubes and let sit for 20 minutes to allow the bread to absorb the juices.
3. Before serving, toss in the feta and basil.
