Hungry Girl Peach Cobbler!
Preheat oven to 400 degrees.
In a large bowl, combine all ingredients for filling except peaches. Add 1/4 cup water, and stir until ingredients have dissolved. Add peaches and mix well. Set aside.
To make the cobbler base, grind cereal to a breadcrumb-like consistency in a blender or food processor. Transfer crumbs to a bowl and add all other dry ingredients for cobbler base. Mix well. Add soy milk, syrup, and butter. Mix until smooth.
Prepare an 8x8 inch baking dish (glass is best) by spraying it well with nonstick spray. (Use butter-flavored spray if you have it). Spoon cobbler base into the bottom of the baking dish, and top evenly with peach filing.
Bake in oven for about 30 minutes, until filling begins to thicken and bubble. Let cool slightly and if you like, top each serving with a squirt of reddi-whip and a sprinkle of cinammon. Enjoy!
