Cook chickpeas until tender. I usually do this a day ahead, drain and store in the fridge. Do wait until they cool to at least room temp before proceeding.
Add all ingredients except summac to a food processor. Blend until smooth. You may need to add more water and or oil to get the consistency you like.
Transfer to a bowl and dust with summac.
