Super easy aromatic stir fry
Prep every thing first
Make a paste of shallots, garlic, galangal, lemon grass, turmeric and coriander.
Add the oil to a hot wok or suitable frying pan fry the paste for about 3 minutes or until the rawness mellows
Meanwhile:
Remove any sinew from the pork then slice through the meat horizontally then cut into narrow strips. Add to the pan and fry for three minutes. Add the beans and fry for 3 mins more.
Add the fish sauce, lime juice and sugar, stir fry for 2 mins more then add salt and pepper to taste
Stir through spring onions, coriander leaves and chillies.
