- Cut onion lenghthwise into strings. Shred ginger and slit green chilies, keep curry leaves ready
- To tadka add these first (oil, channa dal, urad dal, cumin, mustard, turmeric) once the mustard sputters add (cury leaves, green chili, ginger), Saute for 30 seconds to 1 minutes
- Add Onion and Saute for 2 minutes. Add a little salt (about 2 to 3 pinches)
- Add cut or mashed potatoes with 1 tsp salt and mix well
- Sprinkle few drops of water if it's looking too dry
- Add lemon juice and cilantro and mix again. Taste and add any missing ingredients as necessary (salt, lemon juice).
