1. Blend all ingredients until smooth.
2. Preheat a large skillet over medium heat. Grease with cookie spray. Pour batter into the skillet and cook for about 4-5 minutes until bubbles form on top. Flip and cook for 2-3 additional minutes. Repeat until all batter is cooked. Serve hot with nuts, fruits, cottage cheese, or yoghurt.
Storage: Place in a container with cover and refrigerate for up to 5 days or freeze in an airtight container for up to 3 months.
