Better-for-you coffee cake for Sunday morning
Preheat oven to 375
Grease an 8 inch square glass pan with non-stick spray.
Mix together the melted butter, egg, and milk in a large bowl. In another bowl, mix the flour, sugar, baking powder and salt together and sift into the liquid. Using a spatula, stir until lumpy dough forms - mix just until moistened - do not overmix.
Mix together the sugar and cinnamon and sprinkle half into the dough. Combine.
Pour into the pan and sprinkle the remaining cinnamon sugar over the top.
Bake for 15 minutes and enjoy warm.
