1 Heat the oil in a large skillet over medium heat for 2 minutes. Add the butter, letting it melt for a few seconds, and then add the spinach. If your skillet is not large enough to hold all of the raw spinach, add a handful, wait for it to cook down a little, then add the remaining leaves.
2 Cover the skillet and cook over medium heat for 3 to 4 minutes or until spinach is tender.
3 Remove the skillet from the heat, and add lemon juice and nutmeg. Give the spinach a good stir to combine the flavors. Season with salt and pepper to taste and serve warm.
