In a large bowl, mix cooked corned beef, Frank’s Kraut, Toasted rye, Swiss cheese and thousand island. In a separate large bowl, beat eggs, heavy whipping cream, salt and pepper.
Add egg mixture into kraut mixture and stir well.
Pour mixture into a greased cast iron skillet (or 9x13 baking dish) and bake at 350ºF for 30-45 minutes or until a knife comes out of the center clean.
Garnish with chopped parsley and serve. Enjoy!
