A really good beef tenderloin recipe with Rootbeer glaze.
Rootbeer Glazed Beef Tenderloin Bites
1500g - Diced Beef Tenderloin
1/2 cup cornstarch
Glaze #1 (You can use this glaze if you have marinated the meat first)
2 Can Rootbeer
1 tbsp - White Vinegar
To Taste - Chilli Flakes
Glaze Choice #2 Also taste really good even if marinated but has a bit more of a sweeter taste (Best Choice)
1cup root beer (room temperature)
1/2 cup brown sugar, packed
1/4 cup ketchup
1 tablespoon Dijon mustard
(Double recipe if you are making at least 1500g of meat.
Glaze Directions:
1) In medium saucepan, whisk together ingredients.
2) Bring to boil and reduce heat to medium.
3) Cook uncovered until mixture reduces in half (about 15 to 20 minutes) stirring occasionally.
4) Offer the rest of the glaze to guests at the table to flavor their own bites to their liking!
Remoulade Sauce
1/2 Cup - Mayo ( Real Stuff)
1/2 tsp - Grainy Mustard
1 tbsp - White Balsamic Vinegar
1 Clove - Garlic (chopped)
1/2 - Fresh Lemon Juice
Salt and Pepper to taste
1 tsp Sweet Paprika
1 tsp Tabasco Sauce
Just double everything if you need to make more for at least 7 people.
Instructions:
Reduce all ingredients for the glaze in the pan on the stove top into a syrup.
Dust the beef bites in corn starch and deep fry until medium rare
Toss beef bites in a bowl, season with salt, poor root beer syrup over top and toss until coated. The glaze will thicken once you add it to the beef with the corn starch on it. If you need it thicker just add a bit more corn starch.
Combine all ingredients for Remoulade and serve with beef bites.
It is a lot easier if you take a large zip lock bag and out your meat in that has been marinated and then your cornstarch. Close the bad and shake it up well to get them all well coated. You want to try to cook them all at the same time to avoid unevenly cooked pieced of beef.
