Suggest a better descriptionIn a bowl, combine the first four ingredients; cut in butter until crumbly
Press half of the mixture into a greased 8x8 baking pan
Sprinkle Rhubarb over the crust; set aside
In a saucepan, combine sugar, cornstarch, water and vanilla until smooth
Bring to a boil; cook and stir for 2 minutes or until thickened
Pour over rhubarb. Sprinkle with remaining Crumb mixture
Bake at 350 degrees for 17-22 minutes or until golden brow.
Garnish dessert with whipped cream, mint and cinnamon if desired
Yields 4-6 servings
