STEP 1
Heat 2 tablespoons of oil in a saucepan over medium heat. Fry the onion with a pinch of salt for 7 minutes. Add the garlic, chilli and rosemary and cook for a further 1 minute. Add the tomatoes and sugar and simmer for 20 minutes.
STEP 2
Heat the remaining oil in a medium-sized frying pan. Squeeze the sausage from the skins and fry for 5-7 minutes until golden brown, breaking it up with a wooden spoon. Add them to the sauce with the milk and lemon zest and cook for a further 5 minutes. To freeze, allow to cool completely and transfer to large freezer-proof bags.
STEP 3
Cook the pasta according to the instructions on the package. Drain them and toss them with the sauce. When serving, sprinkle with parmesan cheese and parsley leaves.
