Heat oven to 450. Line sheet pan with foil.
Combine panko and cheese, season with salt and pepper.
Combine butter with mustard and spices.
Pat chicken dry and season with salt and pepper on both sides. Thoroughly coat in butter-mustard mixture, then in panko crumbs, pressing to adhere. Transfer to sheet pan and drizzle with olive oil.
Bake 20 - 22 minutes until golden brown and cooked through.
* Smoked paprika, sweet paprika, ground yellow mustard, garlic powder and onion powder in equal proportions.
