Suggest a better description1. Preheat oven to 450 F. Prepare the vinaigrette by whisking Dijon mustard, olive oil, and lemon juice together, and set aside.
2. Score sausages, be careful not to cut all the way through. Combine potatoes, peppers, onion into a large bowl. Sprinkle with garlic, salt, pepper, paprika, olive oil and toss until all vegetables are coated with olive oil and seasonings.
3. Spread vegetables on a large sheet pan then nestle in sausage. Roast sausages and vegetables for 15 minutes on middle oven rack. Turn sausages over and roast 15 more minutes. Sausages are done when an inserted meat thermometer measures 170 F.
4. Remove sheet pan from oven and drizzle with vinaigrette. Then sprinkle with parsley on top
