shrimp casserole
Preheat oven to 425. In large skillet, saute onion and garlic over medium heat until softened and beginning to brown, about 3-4 minutes. Add tomatoes, artichokes, wine, and red pepper and simmer 7-8 minutes until sauce has thickened.
Remove skillet from heat and stir in shrimp and fresh herbs. Season with salt and pepper to taste. Pour into 8x11" baking dish coated with cooking spray. Sprinkle with feta.
Bake for 15 minutes or until shrimp are done. Serve over rice, couscous, or grits.
