Found this recipe on YouTube years ago. I like shrimp & grits, but haven't found a restaurant to match this recipe yet.

Shrimp, Tabasco, juice of whole lemon, and fish sauce in a bowl to marinade. Set aside.
6 cups of water, half teaspoon of salt in grits pot. Bring to boil
add grits, bring to boil, reduce to simmer. cook until thickened. (get it at least close to thick before starting with bacon)
continually stir grits to keep bottom of pot from burning throughout this entire cook
When grits are thick as you like, add cheese and butter
Brown bacon, not crispy. Do not drain.
Add onion, bell pepper, celery, garlic.
simmer to break down onions
add flour to make gravy
simmer and stir a bit for a few
add green onions
simmer a bit
add stock
thicken and add W-sauce and salt to taste
Add shrimp mixture, cook until not translucent, turn off heat a hair early as they continue to cook.
