2 TBSP olive oil
3 large garlic cloves, minced
16 large shrimp shelled and devained
pinch of salt
2 tbsp fresh finely chopped parsley
1 TBSP fresh lemon juice
lemon wedges
In large skillet melt the butter with the olive oil over medium low heat. When butter foam subsides stir in garlic.
Cook stirring occasionally until garlic is lightly golden. DO NOT BROWN
Increase heat to medium high and add shrimp and salt. Cook 2-3 minutes - turn until pink. Stir in parsley and lemon juice. Cook 1 minute more.
Serve finished w/ lemon wedges and parsley over linguini or with potatoes/ vegetables.
