Precook the meat and veggies:
In a large pot, cook the meat (until not quite done) with a drizzle of olive oil and all kinds of spices. Remove from pan and drain. Sauté mushrooms until slightly brown and deglaze pan with red wine. Meanwhile…cook the peppers, onions, and carrots: drizzle with olive oil and cook in the microwave until soft (about 3-4 min.)
Cook Sauce: Combine all ingredients (including more of all spices) in large stock pot. Cook on low for 1 hour stirring occasionally.
Cook noodles in lots of boiling water with a pinch of salt!!
