A frittata is simply a thick, chunky omelette made with some vegetables and usually a little cheese. Served warm, in wedges, it makes an excellent supper. Left to go cold, then sl;iced into chunks, it's robust enough to pack into a lunchbox or picnic basket.
Add bacon and spring onions to cold pan with two tablespoons of water, cover and cook on lowest heat for ten minutes.
Meanwhile prepare the eggs and season, add the parmesan to them.
Throw the spinach in with the bacon and spring onions for a few minutes.
Mix the hot mix in with the egg.
Spray the pan, bring up to heat, and pour the mixture in.
once the bottom is solid, a few minutes, dot the cottage cheese over the top and throw under the grill for 3-5 minutes until it goes a nice golden brown.
