Pork loin stuffed with cream cheese
Trim off the fat. Slice the pork loin by cutting along the long side of the pork as lose to 1/2 inch thick and unroll as you slice to make the pork flat. Once pork is flat pound until pork is even and 1/2 inch. Dice jalapeño into small pieces. Mix together cream cheese, shredded cheese, jalapeño and bread crumbs and set aside. Mix mustard, balsamic vinegar, soy sauce, salt, pepper and garlic powder. Mix 2 tbsp of this into the cream cheese mixture. Reserve the rest as basting sauce once wrapped in .
Spread cheese mixture evenly over the pork and roll into a tight log and place on one end of the bacon strips. Roll with the bacon strips as tight as you can and tie with kitchen string or use the foil to hold together. Once rolled baste on all sides with the remaining sauce.
Bake at 350 degrees on a cookie sheet for an hour or until internal temp is 160 degrees and unwrap from foil. Place under broiler for 5 minutes per side to brown and crisp bacon.
