In a mixing bowl, combine the carrot, mayonnaise, sunflower seeds & parsley. To the same bowl, add the sugar & lemon juice to taste. Season with salt & pepper to taste. Cover the bowl with plastic wrap & chill for at least 1 hour.
When ready to serve, mix thoroughly.
