Oven to 350.
Lg saucepan, combine reserved pineapple juice, ketchup, brown sugar, and vinegar; cook 5 min till hot. Add pineapple chunks, carrots, green pepper; remove from heat.
Lg skillet, heat oil; brown chops.
Baking dish, add chops; spread pineapple-veggie mixture over the top. Cover w/ foil; bake 25-35 min, till chops are done and veggies crisp tender.
Serve over rice
