Peel and chop the sweet potatoes into 1 cm cubes. Heat a non-stick frying pan with oil. Toss in the potatoes and season with salt and pepper. Cook, turning occasionally, over medium heat until the potatoes are just tender and lightly golden at the sides. It takes about 4 minutes.
Coarsely chop the spinach leaves & crumble feta.
In a bowl, lightly beat the eggs with the Parmesan. Add a pinch of salt and pepper to taste.
Stir the spinach and feta into the pan. Mix with the sweet potatoes.
Pour in the egg mixture, and shake the pan gently to distribute the ingredients and leave to cook over low heat until the eggs are beginning to set at the bottom and sides. It takes a few minutes.
Move the pan under the hot grill, and cook until the top of the frittata has almost completely set. It takes about 2-3 minutes. Try not to overcook the eggs or they will turn rubbery.
Let stand for a few minutes.
Cut into slices and serve.
