Fix and Freeze Soup
Brown ground beef in a large Dutch oven over medium-high heat, stirring constantly, 8-10 minutes or until crumbles and is no longer pink. Drain and return to Dutch Oven.
Stir in pinto beans and next 8 ingredients and 2 cups water into beef; bring to boil. Reduce heat to medium a-low. Simmer, stirring occasionally, 30 minutes. Serve with toppings and tortilla sandwich, if desired.
TORTILLA SANDWICH
Sprinkle shredded pepper jack cheese on 6 (6 inch) flour tortillas. Fold tortilla in half, press to seal. Spread butter on each. Cook quesadillas in hot skillet 2-3 minutes each side or until browned. Cut into wedges.
