Suggest a better description1) Preheat oven to 350 degrees Farenheight.
2) Combine chicken, 1/4 of the Picante, cream cheese, onions, cumin,
and oregano in skillet. Place over low heat until cheese is melted.
Stir in 1/2 of jack cheese.
3) Spoon 1/3 cup chicken mixture down center of each tortilla. Roll
up and place seam side down in 9" x 13" pan. Spoon remaining
Picante evenly over each encilada. Cover with remaining jack
cheese.
4) Bake for 15 minutes. Garnish with shredded lettuce, sour cream,
salsa, guacamole, and/or olives.
NOTE: This dish freezes well so you can make a double or quadruple
batch and freeze the excess.
