Let crust sit out for a while to get to room temperature. Flour the crust on one side (the side toward the bowl). Put ready made crust in oven at 450 degrees for 7 minutes. Prick with fork.
When crust comes out of the oven, pour strained tuna in pie crust and spread out evenly. Sprinkle the shredded cheese on top of the tuna. Then, sprinkle the parmesan and green onion on top as well.
Mix the eggs and milk and spices together in a separate bowl. Pour mixture over the tuna, cheese and onion.
Place dish in oven at 350 degrees for 45 minutes.
Prick quiche with a knife, if knife comes out clean, then quiche is done. Let stand for about 10 minutes before serving.
(Can put pemento over tuna and onions, but not necessary)
