Super savory juicy spicy chicken on a bed of couscous - adapted from Milk Street
1. Trim chicken, toss with 2 Tbs turmeric, 1 tsp salt, 1 tsp pepper, let rest for 15 minutes
2. Cut potatoes and carrots into 1" chunks.
3. Cut red onion into 8 wedges with root end intact to hold wedges together.
4. Toss onion, potato, and carrots in a bowl with 2 tbs olive oil, salt, and pepper.
5. In a large pot, add 2 tbs olive oil, 1/2 cup harissa, mince 6 cloves garlic, and 2 tbs tomato paste. Saute 2-3 minutes.
6. Add 1 cup water and chicken to pot. Add vegetables and jalapeƱos on top of chicken - do not mix or stir.
6a. If desired, add 1 can of diced tomatoes on top of vegetables.
7. Simmer covered for 45 minutes - do not mix or stir.
8. In a medium bowl, combine 1 cup couscous and 2 tablespoons of the olive oil, then prepare couscous as directed on package.
9. When finished, serve chicken and vegetables on a bed of couscous.
10. Drizzle with olive oil and serve with lemon wedges.
