Turkey and applewood smoked bacon
1. In a large pot, cook bacon over medium heat until crips. Transfer bacon to a paper towel-lined plate. Do not drain fat from the pot.
2. Add onion, green pepper and garlic, cook 2 minutes. Increase heat to medium-high. Add turkey; cook 6 minutes or until done. Stir in Chili powder, paprika, tomatoes and water. Bring to a boil, reduce heat. Simmer, uncovered 35 minutes.
3. Stir in the beans and 2/3 of the bacon. Cook 10 minutes.
4. Salt to taste if desired. Serve topped with sour cream, remaining bacon and scallions.
