Grease and flour two 8 x 4 inch bread pans. Preheat oven to 325 degrees F. Sift flour, salt, baking powder, baking soda and cinnamon together in a bowl. In seperate bowl, beat eggs, oil, vanilla, and sugar until smooth. Add sifted ingredients and beat well. Stir in zucchini and walnuts until well combined. Pour batter into prepared pans. Bake 40 to 60 minutes testing the center with a toothpick until it comes out clean. Cool in pan for 20 minutes and then remove from pan to completely cool.
