"This recipe was so easy and delicious. I do think the last comments on the original recipe from "greekgirlpgh" are right. The lamb necks should be salt/peppered before (salt with course sea salt). I added my rosemary and lemon juice to the oil/fat right after I pulled the necks--just for about 2 minutes--before adding the chicken stock and the lamb necks back in. I also added splashes of a dry white wine to taste. And I threw in a quartered onion. And indeed, you want to cover the pot while simmering. It was great after 60 minutes, but you could probably cook it for even longer with even more tender results."
