"Chicken came out Very moist, including the breast. I also used the corn fed chickens. I also only used 2 heads of garlic and I felt that was plenty. When I put them in I tried to tuck them in under the wings or by the legs in the roasting pan. Maybe next time, try and put one in the cavity of the chicken? The sauce was good, but definitely a little time consuming. It was also Very different, so if you wanted to just make a different sauce that's ok. I only used 3 lemons and it was fine as well. There was no need to slice the lemon up into pieces because it basically was mush. Next time I would just slice it open and let the contents spill into the sauce because I also strained it before I served it, so I would have gotten all the seeds. I also served 1 head of garlic on our plates, and 1 head of garlic I put into the sauce and tried to smash it up. My sauce also never really got syrupy before I added the vinegar, and I let it simmer for a lot longer and until there was not a ton of liquid left. It got a little more syrupy after I added the vinegar. The sauce came out sweet with a little tang from the vinegar and/or lemon. "
"Very tasty! I used about 7oz of bacon instead of prosciutto, red onion instead of shallots, and gouda instead of gruyere. I also mixed all the bacon in after chopping it up and it really made the whole things have this "bacon" flavor, even if you didn't get a piece of bacon in your bite. "
"It just needed more flavor. Perhaps some herbs or spices. I did add some pepper flakes. Recipe makes a lot."
