Serve warm with vanilla Ice Cream
Preheat oven to 425 degrees. Toss fruit with the sugar, lemon juice and corn starch. Bake in a buttered glass dish for 10 minutes.
Topping;
Stir well together 1 cup flour, 1/2 sugar, 1 tsp baking powder, 1/2 teaspoon salt. Cut the cold butter into teaspoons, add to flour mixture. Mix well with hands until it looks like coarse meal. Stir in boiling water and blend with spoon. Do not over mix.
Top with spoonfuls and sprinkle vanilla extract on top. Bake uncovered @ 425 for 45-55 mintutes.
I usually double the topping recipe.
