Cut steak into 1/2" strips, 1/4" thick.
Heat 1 tablespoon oil in a medium skillet over medium-high heat.
Dry all surface moisture from steak strips with paper towels.
Quickly fry in hot oil on both sides until lightly browned.
Place on a plate.
Reduce heat to medium-low and add 1 tablespoon butter to skillet.
Saute onion and mushrooms until translucent & tender.
Place on plate with steak, leaving as much butter in skillet as possible.
Add butter, if necessary, to make about 1 tablespoon.
Blend in flour.
Cook until frothy.
Blend in beef stock, Worcestershire sauce, salt & pepper to taste.
Simmer & stir until thickened & smooth.
Add beef, onions & mushrooms to sauce & heat through.
Remove from heat & blend in sour cream all at once.
Warm to serving temperature.
Pour over noodles.
