Heat 1 tablespoon oil in a skillet and season steak with salt and pepper.
Brown steak in skillet in batches, transferring to a plate when cooked.
Wipe out skillet and add remaining oil. Add mushrooms and cook until their liquid evaporates. About 5 minutes.
Add sherry and broth and cook until it reduces by half. Add sour cream and heat until mixture thickens.
Return steak and juices to the skillet, season again and heat until warmed through.
Serve on top of egg noodles and sprinkle with parsley.
