This is a hit in my house and it's quick and easy to make recipe based off of mexican sopapillas.
Toast the Tortillas until they are thin and crispy. Then butter one side of each. Sprinkle the cinnamon and sugar mix all over the buttered side, until it is evenly coated. fold in half (optional). SERVE.
