Suggest a better descriptionMarinate shrimp: with 1tsp soya sauce, 1tsp pepper powder, a pinch of turmeric powder, 1/2tsp chilli powder, 1/2tsp cayenne pepper and 1/2tsp salt and set aside.
Make the sauce: Mix 1 heaped tablespoon mayo, 1 heaped tablespoon sweet chili sauce and 1 heaped tablespoon sriracha sauce and set aside.
Batter shrimp: Whisk 2 eggs in a shallow bowl and pour over the marinated shrimp, stir to coat.
Whisk 100g flour, 100g cornstarch and 1 tsp pepper in another shallow bowl.
Working in batches, dredge the shrimp in the flour mixture, shaking off any excess.
Heat about 2 inches of oil in a pan and fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer to a paper-towel-lined plate with a slotted spoon.
Toss the shrimp with the prepared sauce.
Arrange the lettuce in a shallow serving bowl or on individual plates. Top with the shrimp and garnish with chives.
