Line and lightly oil large baking sheet
Combine oats, coconut, almonds and cinnamon in a mixing bowl.
In a separate bowl, combine oil, maple syrup and honey; gently fold wet mixture into dry mix until coated, allowing clumps to form.
Bake for 30 minutes, stirring occasionally (check after 10 or 15 mins in oven) to ensure even doneness. Bake until light golden brown.
Remove from oven, stir again and allow to cool (approx. 15 mins). Stir in fruit, nuts, seeds.
Store in airtight container. Keeps for 2 weeks at room temp.
Experiment by adding any nuts, seeds and dried fruit you have on hand.
